Easy Hummingbird Cake Recipe

This hummingbird cake is one of my favorite cakes. The combination of the rich, sweet flavor of over-ripe banana, the tropical essence of pineapple, and the nutty crunch of toasted pecans are wonderful. It’s also super moist but not too dense, making it a dream to bite into. I’m not a big fan of banana-flavored cakes that are as dense as banana bread and this one definitely isn’t. Tie it all together with a thick coat of velvety cream cheese frosting and you’ve got yourself the perfect dessert.

I had such fun adapting my carrot cake recipe into this classic Southern-style dessert. You’re going to love it just as much as we do. This is definitely a recipe you’ll come back to over and over.

Easy Strawberry Ice Cream Cake

I love all kinds of cake – ice cream cakes included. They are perfect for all kinds of occasions. And so many people love eating ice cream with their cake, why not make a cake that includes both?! This cake does just that, with the bonus of including fresh strawberries for summer.

This strawberry ice cream cake recipe is super easy to follow too. It starts with my well-loved Moist Vanilla Layer Cake, but the recipe is cut in half for just one 8-inch cake layer. It makes a wonderful base for this ice cream cake. On top of the cake layer is a strawberry filling. It’s an extra step that may seem unnecessary, but I wanted to pack a little something extra into this cake and the filling layer does just that. It’s cooked over the stove to remove the excess water so that it’s not icy, but ends up creamy and full of strawberry flavor. If you’re a big strawberry fan, you don’t want to leave this layer out.

The cake is topped with strawberry ice cream and you can either use store-bought or make your own. I love my no-churn strawberry ice cream and it would make a great homemade option. However you go about about the ice cream layer, finish off your ice cream cake with some homemade whipped cream and decorate as you like. This cake is sure to be a hit for summer – and even year-round for true ice cream cake lovers!

Easy Strawberry Brownie Cheesecake

Chocolate, vanilla, and strawberry. A classic combination. This brownie-bottom cheesecake does it right. The base of this delicious dessert is a wonderfully dense and chewy brownie that’s super easy to throw together. It’s perfectly moist and oh so chocolaty. The brownie is topped with a smooth, creamy no-bake vanilla cheesecake that has a wonderful tang to it. The cake is finished off with a layer of luscious whipped cream and a pop of sliced fresh strawberries. Swoon!

Not only is this cheesecake absolutely delicious, but it’s surprisingly simple to make. Rich & Decadent Chocolate Mousse Cake

There’s nothing quite like a rich, silky chocolate mousse. When combined with a moist, tender chocolate cake, you have the most wonderful cake – perfect for celebrations or satisfying a chocolate craving. This chocolate mousse cake is that chocolate cake. If you’ve ever made my Raspberry Chocolate Cake or my Peanut Butter Chocolate Cake, you’ve already made the cake itself before. It’s always a hit and super easy to make. It’s very similar to my favorite Chocolate Cake, but a touch more sturdy, which works well for the layering in this cake.

The three layers of chocolate cake are layered with a traditional, decadent, smooth chocolate mousse. There are no shortcuts here. We are using real-deal chocolate mousse. The whole thing is covered with chocolate-infused whipped cream frosting and garnished with chocolate sprinkles. Each aspect of this cake is loaded with chocolate flavor and is sure to wow the chocolate lovers in your life.
